APPLE PIE FOR BREAKFAST OR ANYTIME
The holiday season is here, folks. That gives me an excuse to eat copious amounts of sweets.
I'm not complaining. It's the one time of the year when everyone brings in cookies and sweets... every day. Thank goodness for stretchy pants.
If you're going to a holiday gathering and want to impress your friends and family this is your recipe. It's perfect for anyone who loves apple pie but is a novice in the kitchen. No pie crust needed.
- 3 pounds of apples, peeled, cored, and cut into chunks (if you're lazy, leave the skins on)
- 2 tablespoons of lemon juice
- 3 tablespoons of brown sugar
- 2 tablespoons of cornstarch
- 1 teaspoon of cinnamon
- 1 stick unsalted butter
- ¼ cup of honey or maple syrup
- ½ flour
- 2 cups oats
- ½ cup of sliced almonds
- ½ shredded coconut
Preheat oven to 400 degrees. Combine apples with lemon juice, sugar, cornstarch, cinnamon and a pinch of salt in a baking dish until coated. In microwave or saucepan, melt butter with honey.
If you’re vegan substitute with earth balance and maple syrup, agave, or brown rice syrup.
Next, stir in flour, oats, sliced almonds, coconut, and a pinch of salt. Sprinkle over apple mixture and bake for 45-55 minutes. You could easily eat this alone or pair it with some yogurt, ice cream, or whipped cream. Hey, it's the holidays!
